5 Easy Recipes to Beat the Quarantine Blues

Let's face it, we are having the worst time of our lives right now. We are at home, nowhere to go. Some of us are away from our loved ones, which is making it ten times worse than what it actually is. And no matter how much social media influencers "encourage" you to develop a new hobby or exercise your brains out, all some of us want to do is stay in our PJs and see the time fly. But no matter what the situation is, one thing that all of us are doing is cooking. With our favourite eateries now closed, we are all entering the kitchen with ladles in hand.


I'm going to share with you 5 super easy recipes which will literally take you less than half an hour to cook. Being a working woman, I really don't feel like cooking during the day while working full-time. So I am always looking at easy recipes to make. I know, you'd be wondering, "but wait, why can't you just make a sandwich?"


Here's why - I HATE ANY FORM OF SANDWICHES.


So here are my top 5 go to recipes, which are easy to make with simple ingredients, tasty and most importantly - NOT SANDWICHES.


1. Spaghetti Aglio E Olio

This dish is a crowd pleaser, and why wouldn't it be? It's one of the easiest Pasta dishes in the world. Albeit healthy isn't a word that pops into your head when you read a pasta recipe, but you can use whole-wheat spaghetti for this dish too. The recipe I always follow for my Aglio E Olio can be found here. I like my Aglio e Oglio a little extra spicy so I always put 2 tbsp of chili flakes. But hey, I am Indian, my spice tolerance level is beyond normal. So just add a dash of chili flakes to it to get that extra kick.



2. Semolina Uttapam (Indian Savoury Pancake)

This immensely popular Indian dish may look complicated, but is one of the easiest and filling ones around. I know a lot of you may think that Indian recipes are complicated and time consuming, but with little meal prep help, Uttapam will be your go to Indian dish.

You can make variations of Uttapam by adding different kind of vegetables, mushroom or take it one step further and add some grated cheese on top.

The easiest Uttapam recipe I use this one. The dish can be eaten on its own or with any spicy sauce or chutney.


03. Egg Fried Rice with leftover rice

Got tonnes of rice leftovers from last night's dinner but out of a side dish? This 15 minute recipe is your life-saver right here

Instead of throwing away your leftover rice, give it a new life by cooking this super easy Egg Fried Rice with it.

The recipe needs everything that is always present in your kitchen. The recipe I refer to uses Jasmine Rice but I cook it with Basmati rice and it comes out perfectly fine. You can find the recipe here.



04. Corn Chaat (Indian Style Corn Salad)

Let's face it, no one can transform simple dishes into tasty explosions like us Indians. That's why classic corn salad is too mainstream for us. We take it one step further by adding much needed zing to it. I turn to this bowl full of amazement whenever I am too lazy to cook but want to have something healthy and tasty. There are many ways to do a corn chaat. The easiest recipe can be found here. However, instead of frying the corn in a pan, I microwave it for 3 minutes with dollop of butter, salt and pepper and then add the remaining ingredients to it and give it a nice toss.


5. Pasta Alfredo

For this recipe, the health quotient goes out of the window. But would you be a fitness freak or would you rather gorge on a piping hot plate of creamy, cheesy pasta?

I use this recipe for Alfredo, however, I love to add some mushroom into my pasta. Stir in the mushroom when you're frying the garlic and you'll be able to elevate this dish to a heavenly level!


So there you have it folks, five quick fixes for five working days of the week. No fancy grocery list, no hours wasted in the kitchen. Just pure gastronomic delight! Happy eating!
